Sausage- Apple Cheddar Potpie

This recipe was so delicious and really made me wonder why I don't cook more with apples. The flavor and texture that apples add to these dishes are so comforting and bright. Manitoba really has some incredible apple varieties but these late season Hidden Rose apples were the perfect apple to choose for this dish.

Here is the recipe, so simple and so so good.

We raise our food here at Wooden Gate Cider, it is a life long love really. So in this recipe I get to use sausage that we made right here from our own pigs that we raised. Pretty privileged I know but don't kid yourself, it is a lot work and something that keeps us pretty close to home throughout the growing season. Worth it though when you can pull off a recipe like this with nothing but homegrown goodness!
Oh and this fancy tool works so good. I hate that it plastic and I am searching for a wooden alternative so if you know someone that makes kitchen tools send them my way.

We grow a big garden too, so adding carrots and onions and garlic to a dish like this makes it even more fulfilling. If you do not grow your own food you can always support your local farmers at farmers markets or join a CSA ( Community Shared Agriculture). Great ways to add local veggies and meats to your kitchen.

When making this I was surprised at how quick it all came together. A keeper recipe for when we need it.
I didn't take a picture of the cider I used but I had Homestead in the fridge and in truth this was the perfect cider to use. This cider is naturally sweet because we use a little apple called Prairie Rose, this apple has pear like qualities that keep the cider sweeter. The sugar in Pears is special because it doesn't let the yeast consume it completely, which is what yeast does in order make alcohol. This apple behaves like the pear in this case, not letting the yeast consume all the sugar so it stays sweeter. Homestead Cider is a classic cider, so tasty to drink and add to recipes like this one.
